Recipe: Apple Pie with Rolled Oat Pastry (using whole wheat pastry flour and oil)

FOR THE ROLLED OAT PASTRY:
1 cup whole wheat pastry flour
1 cup rolled oats
1/2 cup ground walnuts, pecans, hazelnuts, or almonds
2 tablespoons canola oil
1/4 cup maple syrup
1/4 cup water
1/2 teaspoon cinnamon
FOR THE APPLE PIE FILLING:
4 apples, cored, peeled, and sliced
1 teaspoon cinnamon
1/4 cup apple juice
2 tablespoons arrowroot powder
2 tablespoons maple syrup
Preheat oven to 350 degrees F. Rub oil on a 9-inch pie tin, or use a non-stick pan.
TO PREPARE THE CRUST:
Sift the flour into a bowl and add the rolled oats, cinnamon, and nuts. Whisk the maple syrup and oil together and add to the dry ingredients. Slowly add the water until a pliable consistency is reached.
This is not a pastry you can roll out--it will fall apart. Instead, put the dough into the prepared pie tin and spread it with your fingers until it covers evenly, about 1/8-inch thick.
TO PREPARE THE FILLING:
Place the apple slices in the dough and sprinkle with cinnamon.
Dissolve the arrowroot in cold apple juice in a small saucepan and warm over low heat, stirring until thickened. Add the maple syrup and stir for another minute. Pour over the apples.
Put another layer of crust on top, pressing edges together.
Bake in a 350 degree F oven for 20 minutes.
