APPLE SQUASH MUFFINS

Makes 16 muffins
1 cup sifted all-purpose flour
1 cup whole-wheat flour
3 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon cloves
1/4 teaspoon salt
1 cup grated Granny Smith apple
1 cup cooked and pureed winter squash
1/2 cup dark brown sugar
1/2 cup apple juice
1 egg, lightly beaten
1/4 cup melted butter
1/3 cup buttermilk
Preheat oven to 375 degrees F. Grease muffin tins (for 16 muffins).
Mix together the all-purpose flour, whole-wheat flour, baking powder, cinnamon, nutmeg, cloves, and salt into a large bowl.
Combine the apples, squash, brown sugar, apple juice, egg, melted butter, and buttermilk in a medium bowl. Stir the apple mixture into the flour mixture just until the ingredients are moistened. Fill prepared muffin tins.
Bake for 20 minutes or until the muffins are browned.
