Recipe: Wash Day Casserole (eggs, cheese, and corn)

WASH DAY CASSEROLE

1/4 cup butter
5 large eggs
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1 dash salt
1 (16 oz) can corn (cream style or whole kernel)
1 cup cottage cheese
1/2 lb grated cheese (jack or cheddar)
1/2 cup chopped green pepper

Preheat oven to 400 degrees F.

In a 9 inch cast iron skillet, slowly melt butter, turning pan to coat sides and bottom.

Mix eggs with fork until light and creamy. Add remaining ingredients and mix just until blended. Pour into prepared skillet or casserole, if preferred.

Bake for 10 minutes. Reduce heat to 350 degrees F and bake 35 minutes longer (or until set). Can be served hot or cold.

Servings: 6
