GRANDMA'S APPLESAUCE CAKE
Cake:
1/4 c butter, softened
3 large eggs
1/2 c apple juice
1/2 c unsweetened applesauce
2 c unbleached white flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 c raisins, optional
1 fresh apple, washed, peeled, cored, and thinly sliced
Topping:
Unsweetened applesauce warmed over medium heat
In a medium sized bowl, beat together butter, eggs, apple juice, and applesauce.
beat until creamy. Add flour, baking powder, baking soda, and cinnamon. Beat
well. If raisins are desired, stir in.
Oil and flour an 8 inch square baking pan. LIne the bottom of the pan with the
thinly sliced apples, one layer deep. Spoon batter over the apple layer.
Smooth the top of the batter. Bake for 25 to 30 minutes at 350, or until well
browned. Invert onto wire rack to cool, apple side up. Serve apple side up
with warm applesauce over each piece. 6 servings.
