Here's a pretty basic one that is designed to make while out camping.
APPLESAUCE SPICE CAKE
for camping
This is a great recipe for any easy, filling dessert even if you don't have a Dutch oven along. Clean up is a snap. Just throw everything away.
1 (2-layer size) spice box cake (plus ingredients listed on package to prepare cake)
1 large jar applesauce
2 rectangular (13x9-inch) foil baking pans
1 sheet heavy duty aluminum foil (large enough to cover top of foil pan).
Mix up spice cake according to the recipe on the box.
Pour the applesauce into the foil pan. (I use two stacked together for strength). Applesauce should be at least 1-1/2-inches deep. Pour cake over applesauce and gently spread it out.
Cover pan with foil and place in hot coals (no flames). Bake for 20-25 minutes depending on how hot your fire is. Cake should be firm in the center but will be moist on the top, not like in your oven at home.
