Recipe(tried): Apricot chicken
Misc.This is a favourite in our house, we have it at least once a week.

Apricot Chicken
Ingredients~
2 chicken breast fillets - diced
2 medium onions - peeled and diced
3 cloves garlic - finely chopped
1 packet French onion soup mix powder
2 cups apricot nectar
2 tablespoons peanut oil
Salt and freshly ground black pepper - to taste - (I don't use either)
1 cup basmati rice
Boiling water
1 tablespoon lemon juice.
2 level teaspoons salt.
Method~
Heat oil in skillet and brown chicken on all sides.
Remove chicken from pan.
Add onions and brown over medium heat.
Add garlic, brown further 2 minutes.
Combine onion soup mix powder and apricot nectar.
Add chicken pieces to onions in pan.
Pour the nectar mixture over the chicken.
Stir to combine.
Season with salt and pepper.
Place cover on pan, lower heat, and cook a further 15 minutes, or until chicken
is no longer pink.
Meanwhile, place rice in boiling water, add salt and lemon juice and cook until
rice is 'done'.
PS..Sometimes, I add 1 dessertspoon curry powder, and 1 teaspoon turmuric to
the recipe for variation.
