THIS SERVES ABOUT 4 PEOPLE:
1 CP. RICE
1/4 CP. COOKING OIL
1 SMALL ONION, CHOPPED
1 GARLIC CLOVE, MINCED
1 TBSP. PARSLEY, CHOPPED
1 JALAPENO CHILE, MINCED
2 1/2 CPS. CHICKEN BROTH
1 TSP. SALT
FRY RICE IN HOT OIL WITH ONION AND
GARLIC TILL LIGHTLY BROWNED. DRAIN
OFF OIL. ADD BOILING BROTH, PARSLEY,
CHILE, AND SALT. COVER TIGHTLY AND
SIMMER FOR 25 MIN WITHOUT LIFTING
LID.
