1 large can refried beans
8 oz. sour cream
8 oz. avocado dip
3-4 small tomatoes,diced
2 bunches green onions, diced
1 sm. can chopped black olives, drained
1 sm. can green chilies, chopped
12 oz. cheddar cheese, shredded

Spread beans on bottom of 6x9 inch dish. mix together sour cream and avocado dip and spread over beans. Layer the rest in the following order: tomatoes, green onions, black olives, green chilies, and cheddar cheese. Serve with tortilla chips

8 oz.Mozarella cheese, grated
1/4 lb. butter
8 oz. Longhorn cheddar, grated,
1/4-1/2 cup sour cream
1/2 small onion, diced
1 1/2 lbs. fresh mushrooms
5-6 slices bread, crumbled
1/2 tsp. garlic salt
1/2 tsp. pepper

Wash mushrooms and drain. I a large skillet saute diced onion in butter until limp. Add mushroom stems, break away from caps.
Stir in garlic salt and pepper
Brown
Add bread crumbs, sour cream, and mushroom caps.
Mix well
Place combined ingredients alternately in buttered casserole with cheese.
Sprinkle with paprika. Bake at 350 for 15-20 min.

1 sponge cake
1 qt. strawberries or other fruit
1 box instant vanilla pudding
1 container Cool Whip

in a baking dish, break cake into bite size pieces. Puree strawberries. Pour onto cake. Fix pudding as directed on package. Pour on top of berries. Then spread cool whip on top. Chill for at least an hour. for best results, prepare the night before.

1 can 11oz. Mandarin Oranges (IF you use 15 oz. Mandarin oranges use
1/2 cup milk instead of cup milk)
1 pkg. Yellow BUTTER cake mix
3 eggs
1 stick butter instead of what is on box
3/4 cup milk (instead of water)

Follow directions on cake box with above ingredients. Mix well
Mix in can oranges & juice and again mix well.
Pour batter into "3" round pans.
Bake as directed

ICING
1 small Instant Vanilla pudding
1 20 oz. Crushed pineapple
1 12 oz. Cool whip
Mix dry pudding & pineapple together & refrigerate until thick. Mix into cool whip
And frost cake.
REFRIGERATE !!

Gina,Fla (10:39:51) : Jamie's Mom's Cream Cheese Pound Cake

This delicious pound cake was given to me as a gift at the end of one school year. I had to have the recipe.

1 8 oz. cream cheese, softened
1 stick butter, softened
2 sticks margarine, softened
3 c. sugar
6 eggs, room temperature
3 c. flour
1 t. vanilla

Combine and mix cream cheese, butter and margarine until well blended. Add sugar slowly, scrape sides of bowl in between mixing.

Add eggs one at a time and mix well after each addition.

Add flour 2 tablespoons at a time. Add vanilla and blend well.

Pour into ungreased tube pan and bake for 55-60 minutes at 350. Do not open oven before cake is done or it will shrink down. Let cool in pan for 10 minutes, then invert and cool completely before dusting with powdered sugar.

(do not try to cut recipe in half)

8 cups of water
4 cups of sugar
(boil until the sugar is dissolved)
1 large (46 oz) can of unsweetened grapefruit juice.
1 large (46 oz) can unsweetened pineapple juice
1 orange juice (46 oz)
1 qt. gin or vodka
3/4 cup real lemon juice
1 small can of crushed pineapple

Mix altogether in a large pot. Put into 2 large plastic bowls and freeze. Scoop out when company comes for a great summer refresher!

Mary-Ann,.NY (10:04:06) : Italian Pepper Cookies
(this was my grandmother's recipe)

7 cups flour
2 tsp. salt
2 tsp. black pepper
3 tbl fennel seeds
2 cups warm water w/ one pkg yeast dissolved
1 cup oil

Mix above with hands until dough is smooth. Let raise for 1/2 hour. Cut and roll in three inch length and form into small donut shape. Bake for 20 minutes for 400 degrees. Great with some nice Italian wine!!!

(chocolate and peanut butter: what else could be better!! :)

2 sticks margarine, melted
1 lb. powdered sugar
1 (12 oz.) jar peanut butter
1 1/4 c. graham cracker crumbs
1 c. chocolate chips, melted

Mix melted margarine with powdered sugar, peanut butter and cracker crumbs. Press into 9x12 inch pan. Pour melted chocolate chips over mixture. Refrigerate until hard. Wendy.IA (10:32:13) : Soup ingredients:

1 c. diced onion...large
2 lbs cabbage diced
1 8oz tomato sauce
1 28 oz can peeled tomatoes
1 c water
1/4 c. honey
1/4 c. lemon juice

Meatballs

1 lb ground beef
1/2 c raw white rice
1 t. Worcestershire sauce
1/2 t. salt

Put all soup ingredients in large pot. Bring to boil over medium high heat, stirring once or twice. Meanwhile, mix all meatball ingredients and roll into balls. Add to the boiling soup. Reduce to medium low. Cover pot and simmer 2-1/2 hours until most of the liquid is cooked off and soup is thick.

This soup is wonderful in the winter, when it snows...Christy...you probably won't be seeing the snow...enjoy anyways.

1 cooked and boned chicken
In broth from chicken, put 1/2 c. perl rice. Cook til rice is done. add a can of kidney beans, 1 T. chili powder, 1 jar of salsa, 2 cans corn that have been drained. Serve with cheese, tortilla chips, and sour cream.

I never use exact amounts on this recipe. I like it hot, so I add Tabasco sauce to mine. Add the ingredients to your liking. You will love this one.

Wendy.IA (10:05:55) : Peanut Butter Fudge

12 oz. butterscotch chips
14 oz can sweetened condensed milk
1 1/2 c mini marshmallows
2/3 c chunk peanut butter
1 t. vanilla
1 c. chopped peanuts

In large pan, over low heat, combine the first three ingredients. Stir until melted. Add the peanut butter, vanilla and nuts. Pour into lightly greased 9 x 13. Refrigerate until firm. Cut into squares.

Wendy.IA (09:55:07) : Stuffed Mushrooms

1 8oz pkg of cream cheese
1 c. shredded cheddar cheese
2 T. parmesan cheese
4 diced green onions
1-2 t. garlic powder

Mix cream cheese with a small amount of milk and add all other ingredients. Refrigerate several hours. Wash and dry 20-24 mushrooms. Remove stems. In a shallow pan, place 2T. margarine. Let melt. Place 1 t. filling into each cap. Bake @ 350* for 30-35 minutes.

MED/TN (10:17:38) : SWEET POTATO SURPRISE CAKE

1 yellow cake mix
1 cup water
1/2 cup vegetable oil
4 eggs (separated)
2 teaspoons pumpkin pie spice
(or 1 tsp. cinnamon, 1 tsp. nutmeg)
1 1/2 cups grated RAW sweet potatoes
1 cup chopped pecans

First beat the four egg whites in separate bowl. Mix spices with dry cake mix. add water, egg yolks, mix. Stir in raw grated potatoes, and nuts. Fold in beaten egg whites. Bake in 3 floured and greased pans (or wax-papered) at 350 F. for 25-30 min. (This can also be made into 9x13 cake with added time)

COCONUT ICING

1 stick butter
1 can evaporated milk
1 cup sugar
3 egg yolks
1 teaspoon vanilla
1 can (approx. 1 1/2 cups) coconut

In saucepan, mix first four ingredients and cook at medium heat until thickened stirring constantly. Allow to cool and add coconut and vanilla. Frost tops only of 3-layer cake

Prize Orange Coconut Cake
(10 servings)

ORANGE COCONUT CAKE:
3/4 c Shortening, creamed with
2 c Sugar
1 1/2 ts Grated orange rind
2 Eggs yolks, well beaten

Blend together,then sift:
3 1/4 c Cake flour,sift once
4 1/2 ts Baking powder
1/2 ts Salt

Add to first mixture with:
1/2 c Orange juice
3/4 c Water
Beat enough to make batter

Smooth. blend in:
1/2 c Moist, shredded coconut
4 Eggs whites, beaten stiff

Instructions

Pour into three 9 in cake pan, greased and
floured. Bake 30 minutes in moderate over 350F.

Put layers together with Orange filling (below)
and cover with orange frosting. Sprinkle with
3/4 c. moist shredded coconut.

PRIZE ORANGE FILLING:

2 T. flour
4 level T. cornstarch
4 egg yolks, well beaten
1 c sugar
1/2 tsp. salt.

Mix smooth in double broiler.

Add slowly the following, stirring constantly:
1/2 c orange juice
3 T lemon juice
1/4 c water

Add:
2 T butter, grated ring of 1 orange.

Cook over water, stirring occasionally
until thick, about 20 minutes. Cool.
Spread between layers of cake.

1/3 cup oil
1 cup sugar
1 egg, beaten
1 1/2 cup flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1/2 cup milk
TOPPING:
1/4 cup butter, melted
1/2 cup sugar
1 tsp. cinnamon

Cream oil and sugar in mixing bowl. Add remaining ingredients and pour into greased muffin tins. Bake 20-25 minutes at 350. let cool 10 minutes. Remove from pans. Roll in melted butter ad then in cinnamon-sugar. makes 12 large size muffins or 18 small size muffins.

MED/TN (07:08:19) : WOODCOCK, SNIPE, DOVE, OR QUAIL ALMANDINE

6 woodcock, or 12 dove or snipe split down back
1/4 cup flour
Salt and pepper
4 tbsp. butter
1/2 cup white table wine
2 tbsp. lemon juice
1/4 cup blanched, sliced almonds

Dust birds in flour seasoned with salt and pepper. Melt butter in a heavy skillet or electric frying pan and saute birds until nicely browned. Add wine and lemon juice. Cover and continue cooking slowly for 15-20 minutes. Add almonds and cook for 5-10 minutes longer or until birds are fork tender. (Allow 2 quail or woodcock per serving; 4 dove or snipe.)

MED/TN (08:21:59) : Whether sipped from an engraved sterling silver cup, a crystal goblet, or a plastic tumbler, a julep is the flavor of a gentler time. If at all possible, this drink should be served in a frozen cup. A guest should grasp the bottom of the cup with a linen napkin so as not to disturb the frost, an aesthetic part of the experience.

MINT JULEP

1/4 cup bourbon
1 tablespoon Mint Syrup
Garnish: fresh mint sprigs

Combine bourbon and syrup: serve over crushed or shaved ice. Garnish if desired.
YIELD: 1 serving

MINT SYRUP
1 1/2 cups coarsely chopped fresh mint
2 cups sugar
2 cups water

Tie mint in a cheesecloth bag, and place in saucepan. Add sugar and 2 cups
water;bring to boil. Cook stirring constantly until sugar dissolves. Remove from heat; cover and let cool. Remove and discard cheesecloth bag.
YIELD: 2 3/4 cups - enough for 44 juleps. Store any leftover syrup in the refrigerator and use to sweeten iced tea.
