Here is a delicious dinner recipe for Autumn...easy to make and easy clean-up too!
PUMPKIN SOUP WITH GRUYERE
Servings: Serves 6 - 8

1/4 cup butter
1 large onion, chopped
6 cups chicken broth
1 bay leaf
2 cans (14 ounces each) pumpkin pur e
1 1/2 cups heavy (whipping) cream
2 tablespoons orange zest
2 tablespoons Orange Juice
1/8 teaspoon nutmeg, freshly grated
1/8 teaspoon ginger, ground
3/4 pound Gruy re cheese
salt, to taste
white pepper, to taste
2 tablespoons chives, chopped, for garnish
toasted pumpkin seeds
In a large saucepan, melt butter over medium heat. Add onion and saut until tender, about 5 to 6 minutes. Add chicken broth, bay leaf and pumpkin pur e and bring to a boil. Reduce heat to low, cover and simmer for about 25 minutes.
Remove from heat and using a food processor or hand blender, pur e until smooth. Return mixture to pan; add cream, orange zest, orange juice, nutmeg and ginger and cook over low heat. Gradually add cheese, stirring constantly until cheese has fully melted.
Season with salt and pepper and garnish with additional cheese, chives and toasted pumpkin seeds.
FOR GARNISH:
TOASTING PUMPKIN SEEDS
Preheat oven to 350 . Spread pumpkin seeds out on a sheet pan and toast for 10 minutes, or until seeds are puffy and crisp.
BASIL PESTO TURKEY SANDWICH
1 loaf Ciabatta Bread
2 cups cooked turkey breast, sliced
1/2 cup Bella Cucina Basil Pesto
1 jar roasted red bell peppers
1 cup arugula or spinach leaves, loosely packed
4 slices of smoked gouda
Slice ciabatta loaf into 4 equal parts--each part will be one sandwich. Sliced ciabatta sections in half and spread each half with 1 tablespoon basil pesto. Cover bottom half of sandwich with roasted red peppers and place 1/2 cup of turkey breast on top. Place a slice of smoked gouda over turkey and top with a small handful of arugula. Cover sandwich with top half of ciabatta bread and repeat with remaining sandwiches.
