Recipe: Avocado Lime Pie - for Susie H.

Hi Susie! I found this recipe in the Woman's Day Encyclopedia of Cookery (1970's). Hope it is what you want.

Avocado Lime Pie

1 Large Ripe Avocado
1 Can (14 oz.) sweetened condensed milk
Grated rind of 1 lime
1/2 Cup fresh Lime Juice
2 Egg Yolks
Dash of Salt
1 Baked 9" Pie Shell
Avocado (prepared for garnish)
Chopped nuts

Mash avocado well (there should be about 1 1/4 cups). Combine sweetened condensed milk, lime rind, lime juice, well beaten egg yolks & salt. Stir until mixture is thickened. Fold in avocado. Turn into baked pastry shell & chill for several hours. Garnish with avocado balls or slices. Sprinkle with chopped nuts. (Use melon baller or cutter to make balls)
Makes 6 to 8 servings.
