Avocado-Lime Pie

Here is another pie recipe a little different from the one already posoted. This is from "Howard's Hawaiian Cookbook"

1 graham cracker pie crust
3 tablespoons lime juice
1 small package lime gelatin
1 large avocado
6 ounces cream cheese
1 stick butter
1 (8-9 ounce) can crushed pineapple, well drained
1/4 teaspoon salt
1 cup whipping cream

Drain syrup from pineapple, reserving fruit. Add lime juice and enough boiling water to make 2 cups liquid. Pour ot liquid over lime gelatin, until dissolved. Chill until syrupy. Stir occasionally. mash avocado until smooth. Blend in cream cheese, salt and pineapple. Stir avocado mixture into chilled gelatin. Fold in 1/2 cup whipped cream. Pour into baked pie shell. cool. Granish with remaining whipped cream.
