Recipe: Baked Apple Tapioca (Good Housekeeping, 1940's)

BAKED APPLE TAPIOCA

2 cups thinly sliced, peeled and cored apples
1/2 cup brown sugar
2 cups boiling water
1/4 cup quick-cooking tapioca, uncooked
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1 tablespoon grated lemon rind
2 tablespoons butter
1 teaspoon lemon juice
Cream (optional, for serving)

Arrange the apple slices in a 1-quart casserole. Pour combined sugar and water over the apples.

Bake uncovered for 15 minutes at 400 degrees F.

Combine the tapioca, salt, nutmeg and lemon rind. Stir into the apples, along with the butter and lemon juice.

Bake 15 minutes longer, or until the apples are tender, stirring occasionally.

Serve warm, with cream if desired.

Makes 4 servings
