Baked Salmon
Baked Sweet Potatoes with Nutmeg
Pickled Beets with Onions

Found a very easy way to fix salmon that even DH likes - he's never been fond of salmon nor have I because unless you're taking it off the hook fresh, it always seems fishy to us.

After standing at the spice section perusing all the different things, I happened to notice Chef Paul Prudhomme's Salmon Seasoning. Read the recipe for it and bought some salmon. It was delicious! and so easy.

Line a flat pan with some foil. Spread melted butter on the foil where you will be placing the salmon fillet. Then spread some more melted butter over the top and sides of the fillet. Squeeze a half lemon over the top surface, then I also sprinkled a fair amount of dill weed. THEN, top with 2 tsp. of the Salmon Seasoning pressing into the fish.

Bake at 450 degrees for anywhere from 6-9 minutes, don't overcook it or it will be too dry.

I baked some sweet potatoes with nutmeg and butter, and just opened a jar of pickled beets with onions. Very quick meal and it tasted great.
