Baked Salmon Fillets with Almond Crumb Crust

Yield: 6 Servings

3 tbsp bread crumbs
2 tbsp finely chopped fresh parsley
1 tbsp finely chopped almonds
1 tsp dried Italian seasoning
dash salt
1/8 tsp pepper
1 egg white
1 1/2 lb salmon fillets, cut in six pieces

Preheat oven to 425F and spray a sheet pan with nonstick cooking spray.

Dredge fish in egg white, then into combined bread crumbs, parsley, almonds and seasonings.

Bake 10-20 minutes until flakes with fork.
