Recipe(tried): Baked Scrambled Eggs for 35 in a roaster oven
Breakfast and BrunchMade these many times for brunches at church: Usually doubled in 2 nesco roasters.
BAKED SCRAMBLED EGGS
Serves 35
1 cup butter (softened however, melted butter mixes better)
36 eggs
5 cups milk
1 Tablespoon Lawry's Seasoning Salt
1/2 teaspoon white pepper (keeps the color of the eggs nicer than black pepper)
1/2 cup flour
Mix all ingredients well.
Bake at 275 degrees F for 1 hour. Check frequently for burning or hot spots (around the edges) Stirring as needed.
You will think that this in not going to get done and during the last 20 minutes, it really sets up fast. Keep it stirred during this time.
This really works well do to this quantity (1 recipe) in the big hotel 2.5 deep insert pans that go in the oven.
*The roaster oven works well also - but be sure you stir it often.
Non stick spray all the pans first.
Add ins are ok- Diced bell peppers, cooked ham or cooked crumbled sausage too. Stay away from hashbrowns unless willing to re-check time for cooking or pre-cooking hashbrowns first. best if served with hashbrowns as a side dish.
