Recipe(tried): Authentic Swedish Pancakes from Sundsvall Sweden

SWEDISH PANCAKES
1 1/2 cups all-purpose flour
2 cups 2% milk
5 large eggs
1/3 cup sugar
1/4 tsp salt
3 tbsp butter, melted and cooled
Lingonberry Jam (for serving, a must have!)
Combine the flour, milk, eggs, sugar and salt in a large mixing bowl. Beat until the batter is smooth. Stir in the butter. Cover and let stand at room temperature about 30 minutes.
Heat a 9-inch non-stick skillet until drops of water sizzle. Add about 1/3 cup pancake batter to the bottom of the pan. Rotate the pan until the bottom in evenly coated. Cook 1 to 2 minute or until the bottom of the pancake is lightly browned. Adjust the heat as needed.
Using a rubber spatula, lift the pancake and turn to cook the second side. Cook until browned, about 1 to 2 minutes.
Roll or fold pancake and keep warm in a low temperature oven. Serve pancake with lingonberry jam. Other accompaniments include whipped cream, maple syrup or other flavors of jam.
