Recipe: Spinach with Sesame and Garlic

SPINACH WITH SESAME AND GARLIC

1 1/2 tablespoons sesame seed
1 tablespoon seasoned rice vinegar (or 1 tablespoon rice vinegar plus 1/2 teaspoon sugar)
2 teaspoons soy sauce
1 tablespoon sesame oil or vegetable oil
3 cloves garlic, minced
1 1/2 pounds spinach, trimmed, rinsed, chopped

Place sesame seed in 6 quart pan over medium-high heat. Shake pan often till seed is lightly browned, about 7 minutes. Pour out and set aside.

Mix vinegar and soy sauce together and set aside.

In the pan over low heat, mix oil and garlic. Stir often till garlic is barely golden, about 4 minutes; do not scorch.

Add spinach. Turn heat to high and stir till leaves wilt and most of liquid has evaporated, 4 to 5 minutes.

With slotted spoon, transfer spinach to platter. Sprinkle with seed and drizzle with vinegar-soy mixture.
