Recipe(tried): Baked Vegetable Stuffing / Dressing

Mary: I have made all-vegetable stuffing in the past. I baked it in a casserole. I did not use it to stuff a bird. The following is a general listing of ingredients. You could add or delete ingredients as desired. I usually added meat from the turkey neck to the dressing (which I also do with dressing that contains bread.) Hope this helps.

BAKED VEGETABLE STUFFING

2 carrots, peeled and chopped into small pieces
1 celery stalk or bok choi, finely chopped
1 medium onion, finely chopped
2 cups cauliflower, broken into bite-sized pieces
1 zucchini, chopped into small cubes
1 cup of mushrooms, chopped into small pieces
Salt and pepper to taste
1/2 cup vegetable stock
1/2 tsp sage
1/2 tsp thyme
2 Tbsp fresh parsley, chopped (or 1 Tbsp dried)
1 tsp allspice

Combine the first eight ingredients in a casserole dish.

Then in a small bowl combine the remaining ingredients. Whisk together and then pour over the vegetable mixture.

Cover and bake about 35 minutes at 350 degrees F.
