Recipe: Banana Apricot Loaf (using applesauce and egg whites and dried apricots)

BANANA APRICOT LOAF

1 3/4 cups sifted flour
2 1/4 tsp double-acting baking powder
1/2 tsp salt
1/8 cup vegetable oil
2/3 cup sugar
1/4 cup applesauce
3 egg whites
1 1/4 cup mashed banana
1/4 cup chopped dried apricots

Preheat oven to 350 degrees F. Spray loaf pan with vegetable cooking spray and lightly flour.

Sift together first flour, baking powder and salt; set aside.

In a separate bowl, mix together oil, sugar, and applesauce; set aside.

Beat egg whites, then beat egg whites and mashed bananas into oil mixture. Add sifted ingredients in 3 parts, beating slightly after each addition just until mixed. Fold in chopped apricots. Place in prepared pan.

Bake at 350 degrees F about 1 hour.

Makes 1 loaf
