HONEY BREAD
1 cup strong coffee
1 cup sugar
2 eggs
3/4 cup honey
1/2 cup oil
2 1/2 cups sifted flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup chopped nuts
Preheat oven to 375 degrees F. Grease and flour 2 (9x5x3-inch) loaf pans.
In a large mixing bowl, combine coffee, sugar, eggs, honey and oil; set aside.
Combine dry ingredients and add to wet ingredients; beat five minutes. Stir in nuts. Pour mixture into prepared pans.
Bake at 375 degrees F until bread tests done when a toothpick inserted in the center of the loaf comes out clean. Check at approximately 1 hour.
Makes 2 loaves
