BANANA BRAN MUFFINS
4 1/2 cups prepared whole wheat bran mix
1 1/4 cups water
1/2 cup ripe mashed bananas
1/2 cup chopped walnuts
1 egg, slightly beaten
Heat oven to 375 degrees F. Line 18 muffin cups with paper liners.
In a large bowl combine the (dry) bran mix, water, bananas, walnuts, and egg. Stir until the dry ingredients are moistened. Fill the muffin cups 2/3-rd full.
Bake at 375 degrees F for 12 to 15 minutes or until golden brown. serve warm.
Makes 18 muffins
