Banana Bread
1/2 cup margarine or butter
1 cup sugar
2 cups sifted flour
1 teaspoon baking soda
2 eggs
1/2 teaspoon salt
3 large bananas (mashed)
1/2 cup chopped nuts
Cream butter and sugar, add eggs one at a time, beating. Add mashed bananas and beat well. Sift flour, soda, salt and add to bananas-sugar-butter mixture...mix well. Stir in nuts. Pour in greased and floured 9x5x3 loaf pan. Bake at 350 for 55 to 60 minutes.
For shortcut: You may melt butter and add mashed bananas to well-beaten eggs. Sift dry ingredients and mix well. Makes a more compact cake.
