Recipe: Banana Bread with Apricots and Raisins

Banana Bread with Apricots and Raisins

Makes two loaves

This is very easy to make and doesn't take much time. Enjoy.

1 cup sugar
1 stick margarine
2 eggs
2 cups flour
1 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
3-4 tsp sour cream
2-3 bananas, mashed
1 (or more) cup walnuts or pecans
1/2 (or more) cup raisins
1/4 (or more) cup dried apricots, chopped
3/4 (or more)tsp grated lemon rind
juice of a small lemon

1. Cream together: sugar, margarine, eggs, sour cream, lemon juice

2. Mix together: flour, salt, baking powder, baking soda

3. Add 2. to 1. Mix.

4. Mix in remaining ingredients.

5. Pour into two greased bread pans. Bake 40 to 60 minutes at 350F.
