Source: Judy Smallman
Serves 4

1 pound fish fillets
salt
pepper
1/2 cup sour cream
1 1/2 tablespoons grated Parmesan cheese
3/4 teaspoon paprika
1/4 teaspoon tarragon
2 tablespoons Italian-seasoned bread crumbs
2 tablespoons butter
1/4 cup finely chopped parsley
1 lemon, cut into wedges

Preheat oven to 350 degrees.

Arrange fish fillets in single layer in lightly greased, shallow baking dish. Season with salt and pepper.

Combine sour cream, grated cheese, paprika, and tarrgon in mixing bowl; blend well. Spread sour cream mixture evenly over fish fillets.

Sprinkle fish with bread crumbs; dot with butter. Bake for 20 to 25 minutes, or until fish flakes easily when tested with a fork. Remove from oven, sprinkle with parsley, and serve garnished with lemon wedges.
