Recipe: Banana Marshmallow Cake (marshmallows rise to the top when baked)

BANANA MARSHMALLOW CAKE

2 1/2 cups sugar
1 cup shortening
4 egg whites
3 cups flour
1 and 1/2 tsp. baking powder
2 cups mashed bananas
6 Tbsp. buttermilk (or sour milk)
1 tsp. vanilla
3/4 cup chopped nuts (optional)
3/4 cup raisins (optional)
16 regular-size marshmallows

Preheat oven to 350 degrees F. Grease and flour a 9 by 13 inch pan.

Cream together sugar and shortening. Add remaining ingredients, except marshmallows, and mix well.

Place marshmallows in pan, in rows 2 inches apart. Pour batter over the marshmallows. Smack pan on counter (as you do to get the air bubbles out of cake batter) until tops of marshmallows show.

Bake at 350 degrees F for 1 hour.

The marshmallows will melt like little flowers on top of the cake during baking.
