Recipe: Banana Cranberry Bread (with orange peel and cinnamon)

BANANA CRANBERRY BREAD

3 medium extra-ripe Dole Bananas
2 cups fresh or frozen Dole Cranberries
1 1/2 cups sugar
4 teaspoons grated orange peel
3 eggs
1 cup vegetable oil
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
1 1/2 cups chopped walnuts (optional)

Preheat oven to 350 degrees F. Grease 2 (9 x 5-inch) loaf pans

Blend bananas in covered blender container until smooth (1 1/2 cups); set aside.

Chop cranberries; combine with sugar and orange peel. Beat in bananas, eggs and oil; set aside.

Combine dry ingredients and nuts; beat into banana mixture just until blended. Turn into prepared pans.

Bake at 350 degrees F for 50 to 60 minutes or until toothpick inserted comes out clean. Cool 10 minutes. Invert on wire rack to complete cooling.
