Recipe: Banana Crunch Muffins (using grapenuts) for Donna.

I hope this recipe might help you, even though it is not exactly what you are looking for!

BANANA CRUNCH MUFFINS

1/2 cup whole wheat flour
1/2 cup white flour
1/2 cup Grape Nuts
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2 mashed bananas
1/4 cup egg substitute
1 teaspoon vanilla

In a small bowl mix all dry ingredients together.

In a larger bowl mix all wet ingredients together. Add dry ingredients to wet ingredients. Fill muffin tins about 3/4 full.

Bake for 20 to 25 minutes or until toothpick comes out clean in a 350 degree F oven.

Makes about 10 muffins
