Recipe: Banana Bread with Grape Nuts

BANANA BREAD WITH GRAPE NUTS

2 cups sifted all purpose flour
1 cup sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
3/4 cup Post Grape Nuts brand cereal
1/2 cup milk
1 cup mashed banana
1 egg, well beaten
2 tbsp. oil or 2 tbsp. shortening, melted

Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan.

Stir flour with sugar, baking powder and salt. Stir in cereal.

Blend milk with mashed banana, egg and shortening. Add flour mixture, stirring just until all flour is moistened. Pour into prepared loaf pan.

Bake at 350 degrees about 1 hour, until cake tester inserted into center comes out clean. Cool 10 minutes, remove from pan and finish cooling on rack.
