BARBECUE CHICKEN AND SAUCE
FOR THE MARINADE:
1 cup water
hot sauce (to taste)
1/2 whole lemon, squeezed for juice
2 cloves garlic, minced
2 tablespoons brown sugar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 whole fryer chicken, skinned and halved
FOR THE BARBECUE SAUCE:
1 (8 ounce) can tomato sauce
1 cup chopped onion
1/4 cup chili sauce
2 tablespoons non-fat vinaigrette dressing
2 tablespoons natural raw honey
2 cloves garlic, minced
1 tablespoon firmly packed brown sugar
1 tablespoon Worcestershire sauce
Cajun seasoning (to taste)
salt and pepper (to taste)
TO PREPARE THE MARINADE:
Mix water, hot sauce, lemon juice, 2 cloves minced garlic, 2 tablespoons brown sugar, 1/2 teaspoon salt and 1/4 teaspoon pepper together.
Place chicken in a Pyrex dish. Pour marinade over chicken. Refrigerate for 30 to 45 minutes, turning once.
WHEN READY TO COOK:
Preheat gas grill on medium setting. Grill should be allowed to thoroughly heat for at least 45 minutes.
MAKE THE BARBECUE SAUCE:
Combine all ingredients for the barbecue sauce in saucepan and lightly simmer. Reserve for later use.
Take marinated chicken out, discard marinade, and lightly spray chicken halves with cooking spray. Place chicken on grill, allowing 10 minutes per side.
Brush chicken with barbecue sauce when chicken is cooked completely through.
