Recipe: Chicken Country Captain (using tomato sauce and curry, Wesson, 1960's)
Main Dishes - Chicken, PoultryCHICKEN COUNTRY CAPTAIN
1/4 cup flour
1 1/2 tsp. salt
1 frying chicken, cut up
1/4 cup Wesson oil
1 onion, chopped
1 green bell pepper, sliced
1 clove garlic, minced
1 (8 oz.) can tomato sauce, such as Hunt's
2 cups water
1/4 tsp. Tabasco sauce
1 tsp. curry powder
1/2 cup currants or raisins
Hot cooked rice (optional, for serving)
Toasted slivered almonds (for garnish)
Flour and salt chicken. Brown in oil, remove.
Add onion, green pepper and garlic to pan, cook 3 minutes.
Blend in tomato sauce, water, seasonings and currants. Mix well, replace chicken. Cover, simmer 30 minutes, until done.
Delicious with rice and garnish of nuts.
Makes 4 to 6 servings
