GRILLED LIME-MARINATED PORK
4 boneless loin chops or pork chops, trimmed of visible fat
Juice of 2 limes (about 3 tablespoons)
4 tablespoons vegetable oil or olive oil
2 teaspoons cumin seeds, crushed; or 1 teaspoon ground cumin
1 teaspoon dried oregano
2 garlic cloves, peeled, crushed
2 fresh chilies, chopped; or 1 teaspoon crushed red pepper
Freshly ground black pepper to taste
1/2 teaspoon salt
Place the pork in a shallow nonreactive dish or heavy-duty plastic sealable bag.
In a small bowl, combine juice, oil, cumin, oregano, garlic, chilies, pepper and salt. Pour the mixture over the pork. Turn the meat to coat, cover the dish and marinate 1 to 3 hours.
WHEN READY TO COOK:
Prepare the grill. Remove the meat from marinade, discarding the marinade, and place the chops on the grill to sear. Cook about 8 minutes per side, depending on thickness, moving the chops to a cooler spot on the grill if they brown too quickly.
