Recipe: Bear Bread/Swedish Cardamom Cake (Bjorn Kaka)

BEAR BREAD/SWEDISH CARDAMOM CAKE
(BJORN KAKA)


1 1/2 cups sugar
2 eggs
1/4 lb. (1/2 cup) butter or margarine, melted
2 cups flour
2 tsp. baking powder
2 tsp. ground cinnamon
2 tsp. ground cardamom
1 cup milk

Beat the sugar and eggs together until well blended. Beat in the butter. Add dry ingredients and milk and beat until smooth. Place in 2 well greased bread loaf pans.

Bake at 300 degrees F for 1 hour or more until toothpick comes out dry. Cool on racks. Loosen sides and invert.

Freezes well and is better if kept a day before serving.

Makes 2 loaves
