Hi Elly:-) While this recipe doesn't call for a lot of apples, it does call for one. Judy, Quebec originally posted this recipe that I have made several times. It's a very good recipe. I just thought of it when I read your post about wanting muffin recipes using tart apples and thought it might be something you could use for a change of pace.
Also, quite a long time ago, I posted a recipe for Harvest Apple Cake that is made in a bundt pan. The times I have made it, DH and I have eaten a piece for breakfast just as we would eat a muffin. It's a nice fall recipe.
MORNING GLORY MUFFINS
2 cups all purpose flour
1 1/2 cups white sugar
2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. salt
2 cups grated carrot
1/2 cup raisins
1/2 cup nuts
1/2 cup coconut
1 apple, peeled, cored & grated
3 eggs
1 cup vegetable oil
2 tsp. vanilla
Mix in the first 5 ingredients in a large bowl. Stir in the next 5.
In a bowl, beat the eggs, oil and vanilla together. Stir into flour mixture until batter is just combined. Spoon into well greased muffin cups, filling to the top.
Bake at 350 degrees F for 20 minutes.
Makes about 14 large muffins.
