Recipe: Beef and Potato Loaf (meat loaf baked on top of potatoes, 1960's)

BEEF AND POTATO LOAF

"Juicy meat loaf bakes right over sliced potatoes."

FOR THE POTATOES:
4 cups thinly sliced, peeled raw potatoes
1 tablespoon cut-up onion
1 teaspoon salt
1/8 teaspoon ground black pepper
1 teaspoon parsley flakes (optional)

FOR THE MEAT LOAF:
1 lb. lean ground beef
3/4 cup evaporated milk
1/2 cup fine soda cracker crumbs (or uncooked oats)
1/4 cup catsup (or chili sauce)
1/4 cup cut-up onion
1 teaspoon salt
1/8 teaspoon ground black pepper

Arrange evenly in greased 2-quart baking dish potatoes and onion sprinkled with 1 teaspoon salt, 1/8 teaspoon pepper and parsley, if using. Set aside.

Mix together all ingredients for the meat loaf. Spread evenly over potatoes. Decorate top with more catsup, if desired.

Bake in 350 degree F oven (moderate) 1 hour, or until potatoes are tender.

Makes 4 servings
