My mom is 100% italian and always made this yummy soup for all us 5 kids growing up, now I make it for my family, it really is sooo easy and really delicious. This soup is great on a cold day served with some hot bread or rolls and a salad.
1 1lb ground beef, cooked & drained
2-3 zucchinis, shredded
1 onion, chopped
5-6 cups homemade or store bought chicken stock
1 1/2 cups cooked Uncle Ben's rice
Place onions in 1/2 tsp oil and cook a few minutes, add remaining ingredients except for the rice and simmer for 30 minutes, add rice, and ENJOY!!
