These are easy to make and very, very good. I have been making them for years and always get asked for recipe.
BEET PICKLES
Boil beets till tender.
Drain & pour cold water over.
Cut off ends, peel slice or cube at once into pint- size jars.
Have syrup ready.
Makes 3 pints syrup:
2 cups white vinegar
1 1/2 cups sugar
1 Tbsp. salt
1 Tbsp. mixed pickling spice(with just a tiny piece of hot red pepper), tied into cheesecloth bag.
Bring to boil & simmer 5 minutes. Keep hot.. Remove bag.
Pour hot syrup over beets. Cool to room temperature. Cover and store in refrigerator.
