Misc.You must process ALL foods to insure against spoilage, to kill any bacteria, and get a true vacuum seal.
Putting a lid on and letting it seal, you have done nothing to preserve the food.
As for pickled beets, you use straight vinegar, not diluted with water, and you may use brown sugar instead of white sugar.
