BLACK BEAN SALAD WITH ORANGES
1/2 red onion, chopped
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/2 cup olive oil
Juice of 4 limes
1 jalapeno pepper, minced
3 garlic cloves, minced
1 tablespoon chopped fresh cilantro
2 teaspoons ground coriander
1 teaspoon ground cumin
2 oranges, peeled and sectioned
2 cups cooked black beans
Salt and pepper, to taste
Combine first nine ingredients in order in large bowl.
Toss in beans and oranges. Mix to coat. Season to taste with salt and pepper.
Makes 4 servings
