BLACKBERRY DUMPLINGS
BERRY MIXTURE:
1 quart fresh blackberries
2 cups water
Sugar
1 tbsp. cornstarch
DUMPLINGS:
1 1/2 cups biscuit mix
1/2 cup flour
1/4 c. sugar
1 egg, beaten
Water
BERRY MIXTURE:
Wash and cook blackberries with water and sugar added to reach desired sweetness. Cook until berries are done.
Dissolve cornstarch in 2 tablespoons water and add to berries. Cook about 3 to 5 minutes.
DUMPLINGS:
Mix dumpling ingredients together in a bowl, adding as little water as possible to blend. Dough must be thick. Drop into hot berries by tablespoonful.
Cook on low heat turning dumplings over in sauce. Cook until dumplings are done.
BLACKBERRY DUMPLINGS
BLACKBERRY SAUCE:
2 1/2 cups blackberries*
1 cup water
1/2 cup sugar, divided
1/4 tsp. salt
1 tbsp. lemon juice
DUMPLINGS:
1 cup all-purpose flour
2 tsp. baking powder
1/4 tsp. cinnamon
2 tbsp. butter
1/2 cup milk
BERRIES:
Bring blackberries, water, sugar (less 2 tablespoons), and salt to a boil then simmer 5 minutes and add lemon juice.
DUMPLINGS:
Sift flour, baking powder, cinnamon and the remaining 2 tablespoons sugar together. Cut in butter, add milk until mixture is dampened.
By the tablespoon, drop batter side-by-side into bubbling blackberry sauce. Cover tightly and simmer 10 minutes without opening pot.
Serve warm with vanilla ice cream.
