Recipe: Presto Stuffed Apples (using red wine, nuts and raisins, pressure cooker)

PRESTO STUFFED APPLES

1/4 cup golden raisins
1/2 cup dry red wine
1/4 cup chopped nuts
2 tablespoons sugar
1/2 teaspoon grated orange zest
1/2 teaspoon ground cinnamon
4 apples (cooking type preferred)
1 tablespoon butter
1 cup water

Add raisins to a small bowl. Pour over wine, mix, and then let steep for 30 minutes. Drain, reserving wine.

Add raisins, nuts, sugar, orange zest and cinnamon to a bowl. Stir to combine.

Core the apples leaving the apple bottoms solid. Peel off the top 1/3 of apple skin. Tear 4 squares of foil large enough to completely wrap the apple.

Place an apple on each foil square. Stuff with raisin filling, then a quarter of the butter, and completely seal the apple in the foil. Pinch the foil firmly together to seal.

Add reserved wine to the pressure cooker, then the 1 cup water, then apples.

Place pressure regulator on vent pipe and cook 10 minutes with a very slow, steady flow of steam escaping from the pressure regulator. Following pressure cooker instructions, cool cooker at once before opening lid.
