BLENDER BANANA BREAD
2 1/2 cups sifted all-purpose flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/8 teaspoon ground nutmeg
1 1/2 cups Bran Chex cereal
1/3 cup nuts
2 eggs
1/4 cup vegetable oil
2 tablespoons milk
1 teaspoon vanilla
3 cups thinly sliced bananas (3 to 4 large)
Preheat oven to 350 degrees F. Grease 9x5x3-inch loaf pan.
Sift together into large bowl flour, sugar, baking powder, salt, baking soda and nutmeg.
Process Bran Chex in blender to fine crumbs. Stir into flour mixture.
Process nuts to chop. Add to flour.
Process eggs, oil, milk and vanilla just until blended. Add bananas. Process until smooth. Pour over dry ingredients. Stir just until moistened. Turn into pan.
Bake 50-60 minutes or until tester inserted in center comes out clean. Let cool 15 minutes before removing from pan.
Makes 1 loaf
