Sandy, could you be looking for the consistancy
of a coconut chess pie?
This may not be the way your grandmother made
it, but it sounds easy and fits the description.
This came from a Southern Living cookbook and
makes it's own crust. I have not made it.
BLENDER COCONUT PIE
1 (13 oz.) can evaporated milk
3 eggs
1 cup sugar
1 cup flaked coconut
3 tablespoons all-purpose flour
3 tablespoons vegetable oil
1/2 teaspoon vanilla extract
Ground nutmeg
Combine all ing. except nutmeg in container of
blender. Process mixture until well blended.
Pour into a greased and floured 10-in pie plate
(mixture will be thin). Sprinkle top of mixture
with nutmeg; bake at 325 for 40 min or until pie
is set. Let pie stand before serving.
