This does not use Pet milk, but many recipes in the past used it mixed with water because of the unavailability of fresh milk.This recipe is from the Farm Journal.
Coconut Pie
Unbaked 9" pie shell
4 egg whites (divided)
1 tsp. nutmeg
1/8 tsp. salt
2 tsp. vanilla
2 cups sifted confectioners sugar
1 1/2 cups flaked coconut
2 cups milk, scalded
2 Tblsp. melted butter
In top of double boiler, combine 2 egg whites, nutmeg, salt, vanilla, sugar, coconut, milk and butter. Stir and cook over hot (not boiling) water 5 minutes or until mixture has slightly thickened. Do not overcook. Remove from heat and cool at room temperature.
Beat remaining 2 egg whites only to soft, peaks but not too stiff. Fold into cooled pie filling well and pour into pie shell.
Bake in very hot oven (450 degrees) 10 minutes and then lower to 350 and bake 30 to 40 minutes more or until filling in firm in center. Serve cold.
