Recipe: Bobby Flay's Southwestern Potato Salad

Southwestern Potato Salad

Serves 6

16 new potatoes (about 2 lbs.), cooked, drained and sliced 1/2 inch thick
1 cup mayonnaise
1/4 cup Dijon mustard
2 Tbsp. fresh lime juice
1/2 tsp. cayenne pepper
1 medium tomato, chopped
1/2 med. red onion, thinly sliced
1/2 jalapeno, finely diced
2 scallions, chopped (white and green parts)
1 small garlic clove, finely chopped
2 Tbsp. chopped fresh cilantro
Salt and pepper to taste

With spatula, combine mayonnaise, mustard, lime juice and cayenne; stir in remaining dressing ingredients, except potatoes, and mix well. Season to taste with salt and pepper and pour over the warm potatoes.
