GREEK SALAD WITH HERBED TOFU "FETA"
"There is no lettuce in "real" Greek salad, known as horiatiki or farmer's salad, only impeccably ripe tomatoes, cucumbers, and olives alongside shards of glorious, briny feta and a generous dose of extra-virgin olive oil. It's not exactly unhealthy, but replacing the real creamy feta with feta-esque tofu pushes the salad to the top of the fit list, cutting fat and adding tons of protein."

FOR THE HERBED TOFU:
1 (10 ounce) block firm tofu
1/4 cup fresh lemon juice
1/4 cup white vinegar
1 teaspoon kosher salt
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh flat-leaf parsley, plus whole leaves for garnish
FOR THE GREEK SALAD:
4 large beefsteak tomatoes, seeded and diced
1 English cucumber, halved, seeded, and cut into 1-inch dice
1/2 red onion, thinly sliced
1/2 cup kalamata olives, pitted and halved
Juice of 1/2 lemon
1/4 cup extra-virgin olive oil, preferably Greek
Kosher salt and freshly ground black pepper
TO PREP THE TOFU:
Line a plate with several layer of paper towels. Put the tofu on the towels and top with several paper towels. Put a second plate on top of the tofu and weight it down with heavy cans. Transfer to the refrigerator to drain for at least 2 hours and up to 24 hours.
In a medium bowl, whisk together the lemon juice, vinegar, 1/4 cup water, the salt, oregano, and parsley. Thinly slice the tofu, add to the bowl, and toss to coat. Cover and refrigerate for at least 2 hours and up to 8 hours. Gently stir the mixture a few times during the marinating process.
TO SERVE THE SALAD:
In a large bowl, combine the tomatoes, cucumber, onion, and olives. Toss with the lemon juice and oil and season with salt and pepper. Top with the marinated tofu, and garnish with parsley leaves.
Makes 4 servings
