Breaded Baked Chicken

One whole frying chicken in pieces*
1 cup dry bread crumbs
1/2 cup dry parsley
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon paprika
1/2 teaspoon dry sage
1/2 teaspoon dry thyme
1/2 teaspoon pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon chili powder
Salt to taste
Preheat oven to 350F / 180C / Gas Mark 4.
Put bread crumbs in a small mixing bowl. Crumble parsley into a fine powder and add to the bread crumbs. Add all other spices and mix together.
Skin the chicken if desired. Coat one piece of chicken at a time, as follows: wet the chicken piece with water and place it in the bread crumb mixture. Using a spoon, spread the bread crumb mixture all over the chicken and press it into the meat. Place the chicken on a rack in a baking or roasting pan.
Bake for 45 minutes.
*If desired, an equivalent amount of legs, thighs, drumsticks, breasts, or wings can be prepared in lieu of a whole chicken.
The seasoning measurements are approximate. I usually just dump spices into the breadcrumbs without measuring.
