What about breakfast for dinner? At our house we don't often get to enjoy a good breakfast together so maybe once a week we have breakfast for dinner. Sometimes we have pancakes, sometimes omelets and toast. It's a pretty quick meal to prepare using the Hungry Jack Complete pancake mix. You can keep them warm at 200 degrees on a cookie sheet until everything else is ready and I always cook extra.

tip: They really freeze well between waxed paper & you can just heat them for about 1 min. in the microwave. (Also, I diced cooked ham on hand in the freezer to throw into a quick omelet.)
