Recipe: Brighton Hot Dog Shoppe Chili Sauce (Brighton, PA, copycat recipe)

HOT DOG SAUCE
(Brighton Hot Dog Shoppe copycat recipe)

1 1/4 lbs. ground chuck (80/20 is what HOS uses)
2 quarts water, divided use
2 ounces chili powder
1 tablespoon ground black pepper
1 teaspoon salt
6 ounces tomato paste (Heinz)
2/3 cup Heinz Ketchup
8 tablespoons cornstarch

Brown ground chuck (DO NOT DRAIN FAT). Add enough water to just barely cover the ground chuck. Stir in chili powder, black pepper and salt. Simmer on medium to high heat for 30 minutes, stirring often.

Add remaining water. Stir in tomato paste and ketchup; mix well. Bring to a boil, then reduce heat to medium; simmer for 30-45 minutes.

Return to a boil. Stir in cornstarch that has been mixed with only enough water to dissolve corn starch. Sauce will thicken upon standing.
