Recipe: Broccoli Cheese Soup for 100 (2 recipes)

Broccoli Cheese Soup to serve 100
4 cups and 2 tablespoons butter
8 onions, chopped
8 (16 ounce) packages frozen chopped broccoli
33 (14.5 ounce) cans chicken broth
8 (1 pound) loaves processed cheese food, cubed
16-2/3 cups milk
1/2 cup and 1 teaspoon garlic powder
5-1/2 cups cornstarch
8-1/3 cups water
In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.
In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick.

50 (10 ounce) packages frozen chopped broccoli
50 (14.5 ounce) cans chicken broth
6-1/4 cups margarine
16 onions, chopped
8-1/3 cups all-purpose flour
33 cups milk
25 pounds processed cheese food (eg. Velveeta), cubed
16 pinches ground white pepper
In a large pot over medium heat, simmer the broccoli in the broth for 15 minutes. In a separate skillet over medium heat, melt the butter or margarine, add the onions and saute for 5 minutes, or to desired tenderness.
Add the flour to the onions and stir well, forming a pasty substance. Gradually add the milk and stir until thick. Add this mixture to the broccoli mixture in the pot and stir well. Then add the cheese, stirring until melted. Finally, add the pepper. (Note: Be careful not to let the soup boil, or the cheese will break down.)
