Recipe: Broccoli Corn Bread (crock pot)

BROCCOLI CORN BREAD

Prep. Time: 15 minutes
Cooking Time: 6 hours
Ideal slow-cooker size: 3- to 4-qt

1 stick (1/2 cup) margarine, melted
1 (10 oz) pkg. chopped broccoli, cooked and drained
1 onion, chopped
1 (8.5 oz) box corn bread mix
4 eggs, well beaten
8 oz. cottage cheese (1 cup)
1 1/4 tsp. salt

Combine all ingredients. Mix well. Pour into greased slow cooker.

Cover and cook on Low 6 hours, or until toothpick inserted in center comes out clean.

Serving suggestion: Serve like spoon bread, or invert the pot, remove bread, and cut into wedges.

Makes 8 servings
